I found that setting my oven at 550 deg F and heating for 30 minutes gives an instant crisp as soon as the raw dough hits the stone. I like a nice crisp base to my crust and this stone does it. I’m an amatuer when it comes to cooking, but this stone makes me feel like a pizza pro most of the time. (Except when I botch my crust.) I see there’s now a 14 x 16 rectangular version. I may have to buy one of those to have on hand in case I do something clumsy and drop this one.

One last note. I had a stone about 20 years ago that gave off an awful odor that I thought would eventually go away. It didn’t, and I ended up tossing that stone. I was nervous about buying another stone and dealing with odors again. This one gave off no such odor. In fact I hadn’t even thought of that until I was writing this review.

Yes, to fit my toaster oven, I cut it with a tile cutter with no problem. Just make sure to rough sand the cut edges that are sharp.

Place the pizza stone on the solid shelf just above the flame source, not on the floor of the oven.
Make sure that the ventilation holes around the perimeter of the shelf are not covered or blocked.
This pizza stone fits most RV Atwood ovens with a dimension of 151/2” wide x 131/2” deep.
Place the stone far enough back in the oven to keep the holes in front clear.
This stone will even out the oven heat, so items don’t burn.

3. Why does it say Do Not Smell in the description?

My fifth wheel oven has about a 1 inch space behind rack and the sides of rack curve up slightly and stone fits below that lip. That is all the space I need. I’ve had no problem baking with the stone. I just need to turn my oven up about 50 degrees higher than recipes suggest and some things need to cook a little longer.

While you are preheating your stone in the oven, you can set your store-bought frozen pizza on your counter and allow it to thaw. It will be a little flimsy, so after placing cornmeal or flour on your stone as directed, use a long pancake turner to place your pizza on the stone. If you have enough room, you could always use a pan and place the whole shebang on top of the stone. Remember the warnings that an ice cold frozen food item MIGHT crack your stone.

The paddle is simple enough, just a thin slab of aluminum + a handle. You only have to try transferring your meticulously handcrafted homemade pizza without a paddle once before you realize that a paddleless pizza existence is a fate crueler than death.

Second, you need a way to make sure your pie the right size and shape before transfer. Time for a little DIY project. Materials: scissors, piece of cardboard, pencil, and a picture of Tim Allen.

First, prop up the picture of Tim Allen. It is very important to setup your picture of Tim Allen before doing any DIY project. Second, assuming you don’t have a compass lying around, I recommend tracing your pizza stone onto the piece of cardboard. At this point, you’re probably looking at the scissors and thinking, “I can take it from here!” WRONG.

Do NOT cut a piece the same size as the drawing you traced! Ideally, you want your pizza do be at least half an inch smaller than the stone you’ll transfer it on. 1. Can it be sprayed with water in the oven while hot

Yes, this is the only stone on the market that can withstand that type of treatment. There is a video that shows a Thermarite stone being taken out of the oven and having ice dumped on it with the accompanying steam. It is in the review by Katie Smith if you are interested. To my knowledge, this would break all other stones. A bit of caution, water in a hot oven may warp the bottom of the oven, that can happen if there is too much water on the bottom of the oven.

A steel stone is just that, a piece of steel that gets hot in the oven. The Cast Elegance pizza stone is a special formulation of cordierite that is similar to that used in kilns. I use a no-knead pizza dough that I let rise on the counter for 8+ hours and then put into a 1-gallon plastic bag and refrigerate for at least another 12 hours (24+ hours is even better for flavor). I found using a slightly wetter dough in a home oven seems to make the crust just the way I like it. I don’t actually weigh my ingredients but I use about 2 cups of bread flour to 3/4 cups of cold water. I add about heaping tsp of salt, 1 tablespoon of oil and about 1/4 tsp of instant yeast and 1 tsp of honey or sugar to give the yeast something to get them started.

I put the stone in a cold oven and preheat it for about an hour at my oven’s max temp (550F). In my particular oven the middle rack has proven to be the best location for the stone. On the bottom rack the crust seemed to cook faster than the top. On the upper rack it was just the opposite with the top cooking faster than the crust. Once I tried the middle rack, my pizzas found their sweet-spot for my particular oven. Your mileage may vary.

One side-note: If you use the pre-made dough in a can (Pillsbury, Great Value, etc), be sure to use the recommended oven temp even when using the stone. I tried these twice and the first one I did at 550F assuming the stone would just cook these the same as my home-made dough. Big mistake! Bottom crust got way too dark (almost burned) before the pizza toppings were done to my liking. The canned dough must use more sugar (they do taste sweeter…and I am not a huge fan of that) and I think it might be the sugar that causes the dough to get over-browned/burned so fast at the higher temps..

Yes you can. We use it on our Big Green Egg and have had the temp well above 600 degrees with no problems.

Its not necessary nor recommended.The stone will gradually darken with use.I always put cornmeal on my peel so that the pizza slides off easily onto the stone. Some residual cornmeal will be left on the stone which can easily be wiped off after it cools, but may also contribute to some darkening.Be sure to pre-heat the stone in a 500 – 550 degree oven for at least 20 minutes.

3. Is is stone cordierite or ceramic? what is the maximum temperature it can withstand?

I had my pizza oven up to 900+ degrees (trying to be a pizzaiola) with this stone and had no issues. Some people may be turned off by the color and how it stains, but to me each stain is a memory. I have not seasoned it with oil or anything. You can see at the top of the photo the huge black spot, well thats where all the pizza toppings flew off and burned on
there. It cleans up nice, I only washed it with water a few times in the beginning when all my toppings slid off the pizza. The really dark spot does have a little different texture than the rest of the stone but it has not affected the performance. I almost exclusively use this stone for pizza, I have made cookies directly on it and that worked just fine. We leave it in our oven all the time, if we bake something we just put the pan right on top of it. We have not had any issues. I would recommend this to anyone unless you want your stone to look brand new 100% of the time. That’s not going to happen with any stone and in my opinion is unrealistic.
