Earlier this summer I used the ICE-30 at my parents’ home. After making about 7 batches of ice cream, I knew I wanted a maker at my own home. Having spent time using the ICE-30, I had a better idea what features I was looking for and ended up with the ICE-70 after considering the ICE-30, ICE-60, and ICE-70. Here are the reasons that led to that decision:

Noise: Both the ICE-30 and ICE-70 are loud, but the ICE-70 is less loud. Noticeable, but not substantial. I still don’t want to be in the same room while churning, but the ICE-30 was loud enough that I didn’t even want to be in an adjacent room.

Speed: The ICE-70 is noticeably faster. I’ve read other reviews that the ICE-70 turns at about 45 or 55 rpm (adjustable on 2 settings) vs. the ICE-30 turns at about 22 RPM. The faster speed supposedly aerates the ice cream better for a better consistency. I think the ice cream I get from my ICE-70 is slightly airier, and from the ICE-30 slightly more dense, but not a difference worth discounting the ICE-30 over. I also tend to find the faster speed makes the ice cream set up quicker. It will take a few batches to become familiar with what is right, but once you see it, it’s pretty clear. (Additional note: I had more “soft” batches from the ICE-30, but those were early on, and I don’t know if that was because it turns slower, or just because we weren’t yet familiar with when the batch was ready yet – in both cases, you still need to transfer the ice cream to a container and store in the freezer to get it to firm up completely).

Mixing Paddle: Cuisinart updated the mixing paddle for the ICE-60 and ICE-70. It seems to mix the ice cream slightly differently and is slightly easier to get the ice cream out and to clean. Not a substantial difference. I believe the ICE-70 paddle is available for about $10, and it looks like it would also fit the ICE-30 mixer – but don’t quote me on that. I hope to test this at some point.

Lid/Spout/Cover: First I’ll note that the ICE-30 has a larger fill spout for pouring in your cream and ingredients, but it is also open. The ICE-70 has a slightly smaller fill spout but comes with a cover. We used a plate to cover the spout while mixing in the ICE-30 to keep dust/bugs out because we were using it in the basement (due to the noise!) so I do appreciate the built in spout cover in the ICE-70. Some users have complained the Lid doesn’t stay on the ICE-70. Admittedly, the design is probably better and more secure on the ICE-30. With the ICE-70’s smaller ingredients spout in the lid, it’s tempting to pour the ingredients into the freezer bowl before starting the mixer. This doesn’t work well because the cream freezes to the bottom of the bowl and then the mixing paddle doesn’t seat properly in the bottom and the lid doesn’t sit right and the lid won’t lock in and stay secured. I’ve found that if I start the mixer with an empty bowl and pour in the ingredients through the spout on the ICE-70, the lid stays locked firmly in place.

Other differences: Honestly, I chose the ICE-70 over the ICE-60 only because the ICE-70 was stainless steel colored, as are all of my other small appliances. The ICE-70 has an automatic timer, but it really isn’t necessary as you need to watch the consistency and check on it every few minutes anyway. You also don’t want to forget about it (though I don’t know how you could with the noise) and come back to melted ice cream. The ICE-30 has a simple on/off switch. The ICE-60 has what appear to be the same speed settings as the ICE-70, but no automatic timer.

All three mixers use the same freezer bowl, though the one marketed for the ICE-70 costs twice as much as the one for the ICE-30. The exterior color might be different.

Overall: I think the differences between the ICE-30, ICE-60 and ICE-70 are minimal, but are substantial enough to differentiate them. To me, I think the ICE-70 was worth the price difference for the upgrade, but if the cost is a factor that would discourage you from jumping in to buy one, then I wouldn’t discourage anyone from buying the ICE-30 for a more budget friendly option..

I bought this machine at an estate sale for $15. It looked like it had never been used. I just pulled it out after about 3 months. With no experience at all having made ice cream I watched some YouTube videos and decided on a custard base (made with egg yolks). Short answer: no. Dissolved solids are what suppress the freezing point and sugars are your primary source of these. You can reduce sugars by substituting some other solids, like nonfat dry milk (make sure to get 100% skim milk solids). Is your goal reducing sweetness or reducing caloric sugar? If the former, change the sugars you use. Use a mix of dextrose (pure glucose) and table sugar. Dextrose is only 70% as sweet but has nearly double the freezing point suppression. If you want sweetness but no the sugar calories, a portion of the sugar can be replaced by non-digestible sugar alcohols. I’d recommend erythritol. But be careful; if you consume too much it can cause digestive discomfort. And it doesn’t taste 100% like sugar. I wouldn’t substitute more than 60% of the sugar or so.

Both cream and eggs work very well on low carb, and I had done a lot of experimentation with natural sugar replacements, so I felt confident that I could come up with a viable recipe for a reasonably desirable alternative to the high carb stuff that’s so ruinous to a healthy diet.

However, the idea of intermittent churning on which the Donvier is based just didn’t work with sugar free ice cream. Sugar is a highly structural component, especially in ice cream. Once you take it out, that changes every property of how ice cream is made. If you don’t keep the sugar free mixture moving constantly, you’ll end up with creamy soup with a few “icebergs” floating in it. And that’s assuming you don’t break your dasher trying to scrape the hard-frozen mixture off the sides. So I had two choices. I could have continued to buy one of the lower cost Cuisinart machines that churned electrically, but still required keeping a bucket in the freezer, or I could spend (much) more and buy a machine with its own compressor that eliminated the need for a freezer bucket, and which churned continuously.

When I discovered that the second type allows multiple batches to be made in rapid succession, I was sold. With a freezer bucket, you can’t do more than a batch each 24 hours, as the bucket has to be refrozen after each batch. My research led me to the Cuisinart ICE-100. Since my husband loves his ice cream, he agreed to let me spring for it.

When it arrived, I quickly unpacked it, and discovered you must let it stay in place for 24 hours before its first use. The hubs, who is a professional engineer, told me this is true of all compressors. The compressor fluids circulate around during the shipping process, particularly if the box gets positioned with the top of the machine in any configuration than up. And for a compressor to work properly, the fluids have to return to the bottom, with the aid of gravity, meaning right side up. So I sat on my hands for 24 hours. So… hard…

But it was well worth the wait. My first low carb ice cream was a classic vanilla. The texture when the machine had finished was like a Dairy Queen softserve! The taste, however, was much better than that. Think Haagen Dazs. Since then, I have added chocolate, strawberry, black raspberry, blueberry to the repertoire. All of them have been spectacular. And I’m happy to report that even with eating a lot of ice cream (the hubs puts away 2 bowls at a sitting) at we have still continued to lose weight! Diets don’t get much better than this.

The machine itself is incredibly easy to use. You put your well chilled mixture into the lightweight bucket, affix the lid so that it’s locked in place, then plug in. You press the power button, set the timer (I find it easiest just to go with the 60 minute default) and press start. That’s it! I usually check after 30 minutes, and usually, it’s done by then. You can either opt to let it continue churning until either it becomes too stiff to continue, at which point it stops churning, or just press the stop button. The compressor will continue to chill without churning, for the remainder of the 60 minutes, at which point it will turn off.

When it has reached a solid consistency, you can serve it. Or you can scrape it off the dasher and bucket into a container, cover it and set it in the freezer. If softserve isn’t your thing, I’d suggest allowing it to “ripen” in the freezer for an hour before serving, in order for it to firm up. Wash your bucket and dasher, and you can then make another batch.

The machine does make noise when it churns. We don’t find the sound level to be objectionable, even though we have placed it on a counter between the kitchen and family room, where the TV is located. We can hear the TV just fine without adjusting the sound when we’re in the family room, with the machine just 4-5′ behind us.

Another thing to be aware of is that if you opt to leave the mixture in the machine for the full 60 minutes, the bucket may well be frozen in place, making it impossible to remove it for scraping your ice cream out. I haven’t found that to be a big problem, however. I just remove the dasher (which holds the majority of the ice cream) and scrape it, then use a silicone scraper to remove any ice cream that clings to the sides/bottom of the bucket. About 10 minutes after the machine is switched off, if the bucket had become too frozen to remove right away, it is then easily removed for cleaning. And speaking of cleaning, it’s a simple matter. The bucket has only a small center spindle to hold the dasher, so some soapy water and a sponge makes fast work of it. And be sure to keep an old, sanitized toothbrush by your sink, which allows you to thoroughly clean the dasher in about 30 seconds flat. The plastic top is simple to clean, as well. The outside of the machine of burnished stainless is easily kept pristine with just a bit of Windex on a paper towel.

Once you complete making your ice cream, unplug the machine, or a blue light on top will continue flashing until you do.

All in all, this machine is a wonder of modern engineering. A quality machine, well made and simple to use. It’s basically a mini version of what previously had been available only commercially to make smooth, velvety ice cream. The ICE-100 brings this capability into the home, with no salt, no ice, and perhaps best of all, no mess..

Quality ice cream from plain milk?? no way! I use half and half along with heavy cream and get the most delicious ice cream you can imagine! and in only 25 minutes. Also turn your freezer down. If your freezer is empty it may not even go to zero degrees! I clean and rinse the tub quickly and return it to the freezer quickly. Its still mostly frozen when I put it back in and only takes 2-3 hours to refreeze completely! I bought a second tub but never need to use it! Because the plastic dasher/paddle gets warped (at first I thought it was from washing the paddle in the dishwasher, but I’m on my second machine after maybe five years and washing it in hot water after using it seems to have done the same thing so perhaps it’s just from use) and so it doesn’t revolve “flatly” in the circular groove in the clear plastic cover when it’s placed on top. I find that eventually it seems to settle down and revolve evenly without any wobbling, so to speak. Rather than use tape, I’ve used a small but heavy pan with a base a bit larger than the top of the machine set on top of the clear plastic cover until it’s revolving evenly – maybe the first five minutes of use. Other than that, and the need to use a hard – but not too hard: it has to have some flex – plastic utensil to remove the last of the frozen ice cream from the interior bottom and sides of the freezer bowl because it’s made of aluminum and scratches incredibly easily, it’s a terrific unit.

If you’ve never owned one of these types of ice cream makers before, here’s an overview. There are two main parts as far as what makes the ice cream. There is a paddle and a drum, aka the freezer bowl. The night before you intend to make ice cream (or earlier) park your clean freezer bowl in the coldest part of your freezer overnight. This is essential that the bowl be frozen through with no sloshing sound. This drum is what chills the ice cream.

When you’re ready to make the ice cream, put the frozen freezer bowl into the base of the ice cream machine, put the paddle in and put the top on, start the machine and then pour your cold (repeat COLD) ice cream mixture into the freezer bowl as it runs. The cold of the freezer bowl chills the ice cream mixture, the paddle scraps the sides of the freezer bowl as it turns which scrapes off the freezing ice cream incorporating it back into the ice cream mixture and churns air into the mixture. Let the machine run for 20ish minutes. Give it a peak every once in a while because watched ice cream never freezes ;). When it’s done, you’ll hear the motor struggle a bit more because of the thickness of the ice cream, the ice cream will be soft serve consistency and will be done as far as its adventure with the machine. From here you could eat it as soft serve, or scoop out the ice cream into a freezer safe container and freeze it for a few hours. let the freezer bowl warm up a little, then wash by hand with warm soapy water and a soft sponge or cloth.

The negative comments that people have left seem mostly to be due to them not understanding how this machine works or that they expected something different, or both. Yes, you have to freeze the bowl overnight — that’s how this type of ice cream machine chills ice cream. It doesnt have its own refridgeration unit. If you want that, then pay 5x+ the price for a different type of machine. No, this machine doesn’t produce solid hard ice cream — it produces soft serve consistency because it churns and you can’t churn rock solid ice cream. And You MUST WASH THE FREEZER BOWL BY HAND. This isn’t a “to keep it looking it’s best” issue like you sneak your pots and pans in the dishwasher even though you shouldn’t — the heat from the dishwasher will destroy the freezing liquid in the bowl and the bowl will never make ice cream again. You can tell that a well meaning relative put your bowl in the dishwasher because the bowl will still sound sloshy even though it’s been freezing for days.

The It Never Froze My Ice Cream comments — the person either put their freezer bowl in the dishwasher or the bowl wasn’t cold enough. Or the freezer bowl was defective.
The It Won’t Make Ice Cream Immediately, It Makes Soft Serve…comments — that’s true, but that’s how this machine works.

Some have commented that they have to let the finished ice cream (after being I the freezer) sit on the counter for 15 minutes until they can scoop it. My suggestions are: 1. Use more fat in your recipe, 2. Let it churn more air as the machine runs, 3. Know that most commercial ice creams have a ton of what they call “overhead” which is basically air in the ice cream. You may notice that the same volume of two different brands of ice cream weigh differently. Ultra premium brands like Haagen Daaz have little overhead compared to, say most grocery store brands. Lower quality ice creams also have thickeners and stabilizers that hold the ice cream together but keep it from really forming solid. Ever leave a bowl of ice cream on the counter overnight and the next day it’s a little melted but mostly in the same shape? That’s the stabilizers. All of this makes commercial ice cream soft and easy to scoop even though it’s frozen. Take heart that better quality ice creams like the one you are making are naturally harder when frozen, and therefore may take a sturdy ice cream scoop and perhaps a little muscle to scoop. On properly made ice creams (enough fat, enough churning) I’ve never made a batch too hard to scoop straight from the freezer.

In short, this machine works beautifully and its make quality ice cream. I’m very happy with it..

1. Should I buy another bowl for a different flavor? My grandsons don’t like the same flavor? Can it be emptied and used again right after?

Maybe, but the problem would be the coldness of the bowl. If you quickly scraped out the first flavor and immediately put in the mix for the next flavor it might work as long as the bowl doesn’t warm up. You couldn’t wash it out as that would warm the bowl. Take turns making their favorite flavors.

2. Does this machine require purchase of a special mix, or can you make ice cream using a recipe for typical “churned” type product?

No special mix. The recipe in the book (that comes with it) for vanilla ice cream calls for whole milk, sugar, heavy cream, and vanilla.

3. I have a regular ice cream machine at home, but am thinking of ordering this as well. Do you think it would be worth it?

From my point of view, it is more work than it’s worth. All of my recipes are for 4 or 6 quart machines, so none will work with this unit. Purchased mixes don’t taste as good to me as my homemade from scratch ones. No ice, no salt is true, but you have to freeze the insulated mixing bowl for a minimum of 12 hours before using it. 24 hours works better, and then refreeze the contents you don’t use right away, in the bowl, so you can dispense them using the machine again. Plus, it’s mostly plastic. If you drop it, it breaks and needs to be replaced. My opinion, stay with a 4 or 6 quart electric machine that lasts and produces more ice cream.

4. how long does the ice cream last before melting after you make it?

As soon the ice cream is ready I mean after 30 minutes I put in the container and in the freezer, if it is very hot the ice cream will not stay hard.

I got blue pint size. Minor quibble: it doesn’t look like the light blue you see in the photo. It’s more like a turquoise. A small thing but it bugs because in the photo it looks like the color of my three fav teams Manchester City, UCLA, and Hoka. I planned to bring this thing to watch parties and make ice cream for halftime and wrap ups.

it would depend on what shape you make it, if you line the inside with chocolate, if you use soft serve ice cream but i did the math, and based on the fact that the temp outside is consistently reaching 100+ degrees F, the answer is “about half as much as i want right now”.
if you want the actual volume of a right circular cone made from a circle of those dimensions i could do the math for you, but i would need to be invited to your next ice cream party as payment.
