1. Has anyone upgraded from the lux or duo to the ultra? is it worth it for the easier controls and greater programmability?

I bought the Ultra so I could do sous vide easily. Couldn’t figure out a reliable method to control temperature with the Duo. (You Tube used Ultra) I also bought at Sur La Table for either $99.95 or $119.95. Use this one more than I did the Duo. Having a lot of fun. Since sous vide takes longer, good to have second pot on hand for sides.

2. Want to try the sous vide function but need something to circulate the water. Anything on Amazon to do this?

You don’t need a circulator but you will need a thermometer because the water temperature is not regulated the way a normal sous vide is. Depending on how much water you have in the pot.you’ll need to adjust the temperature accordingly. For example with a 2/3 filled pot and 130 degree setting, the water never got above 123 degrees in my pot. With 2″ of water it gets much closer.

3. This new model states in compensates for altitude. Why? I thought that was what pressure cooking is supposed to do.

A pressure cooker reaches a set level of pressure *relative to* the surrounding atmospheric pressure outside the pot. So altitude definitely affects pressure cooking as well as regular cooking.

A pressure cooker at 11.5 psi (Instant Pot’s high pressure setting) raises the cooking temp (that is, the temperature at which water boils) from 212°F at sea level to about 243°F. Denver is just a bit below 5400′, where the boiling temp is 202°F with no additional pressure. In Denver, the pressure cooker still reaches 11.5 psi but the absolute pressure inside the pot is equivalent to only 9 psi at sea level, and the temp will reach only 238°F. So it will still make a huge difference in cooking time versus regular cooking, but it won’t cook quite as fast as a low elevation.

If you took a standard pressure cooker to the top of Mt Everest, it would cook food much slower than regular (no pressure) cooking at sea level.

the same accessories you buy for the instant pot 6 quart can fit easily, with the new ultra, I have an extra pot and seals, and they are the same size. I would purchase extra ring set-they rings do get a bit discolored after several uses. I bought an extra 6 quart pot because I wanted to use it to steam veggies. Hope this is helpful.

1. Does the hole for the probe in this crockpot really not cause any problems while cooking? I was always under the impression any leaks/holes are bad

Look at other slow cookers, not many have what you’d call a tight-fitting lid. It’s usually just a thin glass lid that can rattle a bit when cooking on Highl. I have an earlier HB Stay or Go non-programmable model with a hole, no probe, no problems. There’s no stream of steam that escapes, nothing seems to come out of it, even cooking on High.

2. does that have a delay start feature

Sorry Kim, but you can’t set this cooker to turn on later in the day.For the meals that I cook in this unit that’s never been a problem–for example, a pot roast that requires a 6-hour cooking time on the low setting will still be perfect after 8 or 10 hours because there’s simply no evaporation to allow the food to dry out.If you’re making a casserole that only needs to “bake” for a couple hours, and you want to serve after an 8-hour workday, you’ll need to use the timed feature on your regular oven.I’m not aware of any slow cookers that have a delayed start feature for that very reason; they simply don’t allow food to dry out.So as long as you cook your food for the minimum required time, extending the length of cooking time for hours, even, is never a problem.This slow cooker will automatically switch to the warm setting after the cook time that you programmed has elapsed, or the probe registers that the food is cooked.I’ve used quite a few different slow cookers, and this one (and its’ smaller cousin) are by far my favorites.If you spent 10 times the amount of money, this would still be the best slow cooker of all, in my opinion.

If your talking about the “ceramic crock” that you place your food in then yes, its removable. It is also microwave-safe and oven proof.

You don’t need delayed start when it has the Warm function. It doesn’t continue cooking like it would if left like on Low. On Warm it just sits there, not spoiling, not cooking anymore, ive never pushed it past like a day but I’ve let it stay in overnight after it had sat cooking all day and the next day the food was just as good.

And that crockpot was doable but some recipes call for cooking on low for 9 hours; others for 6 and really all I want is to throw the ingredients into the crockpot and forget about it.

My old basic crockpot didn’t let me do that. The Hamilton Beach, on the other hand does. And it is so easy to use! I hate electronics (ask my husband) but I can operate this crockpot with ease. You just press the on button (the red circle on the left) then select the time by pushing the up/down arrows on the right, press enter, select the heat setting press enter and you’re done. Once it’s finished, it goes to Warm setting so your food doesn’t spoil. This means that if you set it on a Friday night and want to sleep in Saturday morning, you can. You really don’t have to worry about getting up just to turn off the crockpot. If you are cooking a full chicken or something as big as that you can use the thermometer probe and set your own temperature you want maintained to make sure that meat is cooked properly. It also has one of those lids that locks down with simple lever clamps at each end so now I can be one of “those” people who takes up the office kitchen because we are having a potluck. The lid does have a rubber seal but do be sure to keep it upright because there are small vent holes and a hole for the probe to be inserted through the glass lid.

All in all, this really is a set it and forget it crockpot (as advertised). It is also worth noting (because this has been in the news) that Healing Gourmet (a food safety site) lists Hamilton as one of the ten brands to look for when choosing a crockpot and that wirecutter (a site that reviews the gadgets in our lives) tells us that this crockpot “outperformed much more expensive models.” In a couple of negative reviews I have seen, there were complaints about the glass breaking. The instructions say to only clamp down the lid when transporting food. My husband says that there is a good chance that tightening the lid while cooking would put extra stress on the glass making it more likely to break/shatter. So bear this in mind.

I admit I haven’t tried those more expensive models (the whole point of using a crockpot to begin with was to save money) but I have to admit I am a little in love with this crockpot and highly recommend it..

I switched off and they were already damaged. The voltage here in South Africa is 220 V. I cannot recall seeing any specific notation about the specific voltage, but 220 V must have been too high – unless the handles were defective.I returned the pot and was promised a refund by Amazon Returns. Slow Cookers may vary but generally, the LOW setting should be about 200 F and the HIGH setting about 300 F. Food cooked with liquid in a Slow Cooker should simmer on low and simmer more vigorously on high.

(Note: A simmer is identified by pockets of fine bubbling that give off occasional wisps of steam. It’s ideal for mingling flavors while proteins like meat or beans gently cook until tender.)

I cook mostly on low and I got the simmer (mostly around the outsides) and my foods cooked to perfection.

The rice was cooked on High but I forgot to look for the simmer. I have had issues with my rice cooker burning the bottom layer of rice and finally gave up using it. I saw on the internet that you can use your slow cooker to make rice so I decided to try it. My Slow Cooker did so much better than my rice cooker that I turned around and bought a very small Slow Cooker (1.5 quart) to use to for making rice. It takes a lot longer than a rice cooker but it did not scorch the bottom layer.

Crock-Pot is my go-to Brand for Slow Cookers! When they say it is 8-quarts (or 2, 3, 6, or 7-quarts) it is measured to the fill line and not the rim. Unfortunately, there is not an industry standard for measuring Slow Cookers so with some brands it will actually hold a good deal less than the stated quarts when cooking. This does not happen with Crock-Pots they will hold the amount they claim for actually cooking.

Over this year I have used mine about twice a month and no such issues. Sometimes it needs a good cleaning with vineager like other crock pots, but no staining.
