The higher the wattage the faster the unit will heat up but it will be at the cost of burning more energy. For stir fry you may want to start at 1800 then drop down to 1300 if possible. Also with stir fry I believe you will lose more of the nutrients at a higher wattage setting, however the higher wattage the less amount of cooking time will be required.

2. What is the largest diameter pan this can handle? Can it handle a 12″ skillet?

When I boil a pot of water I can tell by the bubbles that the heated area is the inner circle, 5″ diameter. I have a 10″ fry pan and when I try to make an omelet it cooks in the middle but stays raw on the outer edges. My 8″ Chantal fry pan (SLIN63-20C) works great for omelets, I think because of the smaller size but also because it has a thick base that conducts heat really well, so it heats evenly.

If you’re just boiling or simmering liquid, you can go bigger diameter.

3. What is the smallest diameter pot it will sense ?

It is hard to give an definitive answer. Not only the size of the cookware bottom matters (diameter of the bottom magnetic layer), the material type, iron percentage of the magnetic layer is another key factor. The thickness of the magnetic layer also matters. For example, a 4″ cast iron (almost 100% iron and very thick) may work on induction cooktop, but a 5″ or even 6″ aluminum pan with magnetic steel bottom may not work because there is not enough magnetic material to absorb the electromagnetic waves.

yes and no, depends on type of metal used in skillet. solid steel will heat at coil location first, then spread toward the sides. No, its 120v. It plugs into a regular outlet and has a standard three prong plug, but the higher settings will draw the whole circuit, so I use a dedicated circuit for it to keep from flipping a breaker when I cook at higher wattages.

4. When i set a pot of water to 100 degrees it heated to 173 degrees. How can i make it function correctly?

I assume that is 100 degrees C. However, the lowest temp I’ve observed on the unit is 260F/126C. I personally don’t really use the temperature controls, I just go by the wattage controls either and just eyeball it while it’s cooking.

NOTE!IT IS NOT TRUE that, as was implied in a previous response,it’s NOT true that ‘stainless steel cookware ‘ will always work with anY induction cooktop (without a ‘plate’, as i’ll explain in a moment.NOT all stainless is ‘magnetic’ So , simple test: will a magnet attract the BOTTOM of your cookware (where it’d be in contact with the cooktop) ?? IF SO, then YES it’ll work fine .. IF NOT: it will NOT work at all unless you obtain a ‘magnetic plate’ that has the advantage of allowing ALL your cookware to work fine (and in many cases: MUCH better ..!!
Such ‘plates ‘ are maybe 1/8″ thick stainless ‘of the magnetic persuasion’ .. and I always use one even with my perfectly magnetic cookware: including cast iron!Reason??? (good question!)

Stand alone. It has feet along the bottom that raise it up slightly. There are fans with the intake on the bottom. I think using as an inset would block the airflow.

You do NOT need to simmer to make bone broth – 180 F will work just fine. THere is nothing magic about “boiling” – it just happens to be the max temp water can achive at starndard pressure. I make broth all the time at <100 C (usually 80 C is my sweet spot).

Yes it is, which limits the maximum power to 1800 Watts.

3. What weight can this hold

I can’t give you a weight, it’s a solid commercial unit, I use cast iron pans and don’t think that and pan/pot the size of the heating element would be to heavy for the unit.

4. What size pots will this handle?

The glass cooking surface is appx 11″ x 11″, for a diagonal of 15.25″. Including the metal perimeter, the overall surface is appx 13″ x 13″, for a diagonal of 18″. We often boil water in a 16 quart stock pot with 11″ diameter.
