This pan is so awesome that I got the glass lid (sold separately), then later I tried to find the matching saucepan w/lid but no such luck. It is heavy duty for sure; seems more like commercial cookware than residential. Since it would take a Lab and Technician to remove the coating and test its contents, no one but the manufacturer truly knows the contents of its coating. I do know that it is more durable than Teflon. Like everything sold on Earth, consumers must rely on product manufacturer’s description to be accurate. The customer rating of 4.7 out of 5 stars, says it all! But if chemicals are of concern, spend the money and go all aluminum.

Which brings me to the next thing, I don’t personally care but the coating is only PFOA free, not PTFE free. If you’re looking for PTFE free though, keep looking, your princess is in another castle.
Aside from that the coating feels solid and looking at the edges seems fairly thick. With it being PTFE and not ceramic based though definitely avoid metal utensils like the plague. Some ceramic coatings can take them…This will not. From what I can tell there is no ceramic in the plain C3 so treat it like a normal nonstick pan. (Source: Forgot Amazon won’t allow links of any kind…anyway google Greblon C3 and it is pretty easy to find their chart with the different coatings.)

Build quality:
Initial impressions are build quality is good. Three rivet handle should stay in place for a good long time. The silicon is comfortable to hold and solidly bonded to the handle. Page says it is heat resistant silicon but page nor manual says to what temp. So I would lean towards “Not oven safe”.
The bottom of the pan as received is very flat. Time will tell if it domes or not. It’s fairly thick and heavy so I’m hoping it doesn’t. There’s a photo as well showing my test of the bottom of the pan. Had it sitting on a flat counter after the first wash. Water bead sits in the middle of the pan (or wherever you move it to) without running to the edges like it would if it was domed.
Coating and outer enamel are very even and there are no strange smells or anything that I can detect.

Final thoughts:
Initial impressions have me satisfied with my purchase. Though I am a little disappointed that the coating does not seem to have any ceramic in it the rest of the build quality seems quite nice. I will update this review once I have used it for a few weeks.

PS: For anyone wanting to know if lids fit, it’s 10 1/8″ Included a pic with tape measure.

UPDATE: Because as my single commenter points out, first impression reviews are not the be all end all. Here is an update.

It has been about 1 year and 8 months since I bought this pan. The coating is not *perfectly* nonstick anymore but it has held up better than any nonstick pan I’ve had before.
The biggest issue is one scratch from a roommate who has been appropriately summarily flogged for using a metal utensil in my wonderful nonstick pan. Don’t use metal utensils in any nonstick pan and expect them to last as long. That’s just good reasoning. So downside, things will stick to that spot without a little oil or something in the pan.
Eggs will also stick slightly at this point. I think the pan may have also been overheated a time or two by the same roommate because the coating in the center (where the flame is on our gas stove) is just ever so slightly more tan than the rest. Need to hide my good pans…

Anyway overall, it’s nearly two years later and this nonstick is pretty darn good still despite some abuse. Which is more than I can say for most of the nonsticks I’ve owned..

I will admit that I almost exclusively use them for eggs- omelettes, scrambles, French toast, or whatever kind of eggs. (I prefer not to use nonstick for other cooking because it is unnecessary and I have never had another nonstick pan where the coating lasts more than 18 months or that can stand cooking at higher temps.) I don’t recall seeing anything about olive oil when I read the product information.I use olive oil in my pan.A few words of advice is to not cook anything at a high heat especially on a gas stove and let it cool completely before washing or spraying with water.I also don’t put it in the dishwasher.Just my opinion but the pans last longer if I follow those recommendations.

I had to put a lot of effort and care into getting most of the residue cleaned off. But you know what? Now that I have, it is basically back to new! So even my big mess up didn’t destroy the pan somehow. And if it had, I would have just bought another because I love this guy.

I will say I’m not a “non-stick” purist, I always use a little oil or butter to fry and I’ve learned to allow foods to fry long enough to”release” from the pan before moving/flipping them.

The pan’s thick bottom distributes heat well and it worked great again (this morning) when I fried 6 eggs at one time with a sliver of butter (1/3 of a pat) melted & brushed across the bottom and up on the sides.

We typically use silicone or non-metallic utensils in this pan, but it stands up to metal utensils as long as one uses them gently and doesn’t “dig in” with them. I don’t hesitate to use a metal fork to flip/stir foods (chops, bacon, home-fries, etc.)

Absolutely simple & fast cleanup with soap & hot water. I have several 12″ lids that work great on this pan.

I’ve had great success with Amazon Warehouse Deals – If I were to buy another, I’d buy the one there priced at $39.65.

My mom asked me for this “amazing pan” she saw on TV one night. My first reaction to her request was not too positive. I’ve been let down by “As seen on TV” products in the past. The first thing I did before even thinking about purchasing the pan is check reviews on amazon. Just like you, I was very sckeptical due to the disparity from one review to another. I got tired of telling my mom this was probably a TV scam. After several days of hearing my mom go on and on about this “special pan” from the infomercial, I broke down and drove to the nearest Wallmart. A store I have only been to twice. I can honestly say with complete confidence that the pan I purchased for my mom is just as it was described on the TV. I would reccomend you take a chance and try it for yourself with a small caveat: go get it at Wallmart or BED BATH and BEYOND. That way, if you don’t like the way it works after you use it once, simply return it immediately. Make sure to keep your reciept along with the original packaging and you shouldn’t have any trouble with the return. This way you can see for yourself if it works! After that, give a review on Amazon so we can get more statistics. This may be one of those hit-and-miss products! In closing, I have to admit, my mom loves her pan! Good Luck! 2. How does it compare to the Green Pan?

I haven’t tried Gotham yet, purchased at Costco awhile ago but returned it without using after I read all the Amazon reviews. I bought Green Pans mainly because I have a bird that likes to be in the kitchen & needed chemical free. The 8″ Green pan works like a charm, almost too good, foods are difficult to flip, have to chase it around the pan. The 12″ suddenly started having food sticking issues, big time–I couldn’t get the food off even after soaking since only non-abrasives can be used. Followed all caveats. So I’m with all of you that can’t make heads or tails out of so many positive reviews in the presence of so many negative ones! Was thinking about re-buying the Gotham until I read all the negatives. Can’t win. Threw out all my flaked other nonstick pans. Guess I’ll have to go back to the old-fashioned stainless steel or aluminum where I can use my Pam, scrub with Brillo & do whatever I want. Sigh!

Claim #2: Scratch resistant. Definitely better than average, although I would think twice before beating your eggs in the pan or using a metal meat mallet to sound the dinner bell!
Claim #3: Dishwasher safe. Does this claim infer the safety to this pan or to your dishwasher? Yes, it is in fact safe for your dishwasher! Your pan, however, will most likely suffer a slow death after repeated washings. This very much depends upon the chemicals you are using in your dishwasher. Conclusion? It is best to hand wash with a minimal amount of soap.
Claim #4: Pan stands up to 500 degree oven temperatures. Well this one is just plain stupid. So long as there is food cooking in the pan, the temperature of the pan will never come close to reaching 500 degrees. The handle may, but so what! It’s constructed of steel! Want to test their claim in the absolute sense? Place your empty pan in a 500 degree oven, allow it to cook for 30 minutes and then get back to me. The point is, do not overheat an empty pan either in the oven or on the stove top.
In conclusion: Overall, this pan has performed better than any other “non-stick” pan I have ever used. It offers better non-stick potential, better longevity and better bang for your buck. And no, this will not be the last non-stick pan you will need to purchase unless you decide to boycott this style of cookware in the future or give up the chore, I mean, joy of cooking altogether!.

1. I saw the infomercial for this pan and wanted to check on Amazon’s reviewers. How can the reviews be so opposite? I’m hesitant to purchase.

My mom asked me for this “amazing pan” she saw on TV one night. My first reaction to her request was not too positive. I’ve been let down by “As seen on TV” products in the past. The first thing I did before even thinking about purchasing the pan is check reviews on amazon. Just like you, I was very sckeptical due to the disparity from one review to another. I got tired of telling my mom this was probably a TV scam. After several days of hearing my mom go on and on about this “special pan” from the infomercial, I broke down and drove to the nearest Wallmart. A store I have only been to twice. I can honestly say with complete confidence that the pan I purchased for my mom is just as it was described on the TV. I would reccomend you take a chance and try it for yourself with a small caveat: go get it at Wallmart or BED BATH and BEYOND. That way, if you don’t like the way it works after you use it once, simply return it immediately. Make sure to keep your reciept along with the original packaging and you shouldn’t have any trouble with the return. This way you can see for yourself if it works! After that, give a review on Amazon so we can get more statistics. This may be one of those hit-and-miss products! In closing, I have to admit, my mom loves her pan! Good Luck! 2. How does it compare to the Green Pan?

I haven’t tried Gotham yet, purchased at Costco awhile ago but returned it without using after I read all the Amazon reviews. I bought Green Pans mainly because I have a bird that likes to be in the kitchen & needed chemical free. The 8″ Green pan works like a charm, almost too good, foods are difficult to flip, have to chase it around the pan. The 12″ suddenly started having food sticking issues, big time–I couldn’t get the food off even after soaking since only non-abrasives can be used. Followed all caveats. So I’m with all of you that can’t make heads or tails out of so many positive reviews in the presence of so many negative ones! Was thinking about re-buying the Gotham until I read all the negatives. Can’t win. Threw out all my flaked other nonstick pans. Guess I’ll have to go back to the old-fashioned stainless steel or aluminum where I can use my Pam, scrub with Brillo & do whatever I want. Sigh!

3. So many 1 star critical reviews! i’m wondering if all the 5 star “verified” ratings are from shills. how can we explain the vastly different ratings?

I was just reading through these.I hadn’t read the reviews beforehand either.I thought it was kinda funny how that one person said that 5 star reviews were short sentences while the 1 stars were highly detailed.That doesn’t mean any hanky panky is going on.Think about it.”Do You like it?””Yes, I think it’s wonderful!”- or -“No, because blah blah blah blah blah”.That’s how real life works.I think it’s important to see the many different kinds of experiences.I just don’t understand how mine doesn’t stick at all but some people stuck like an iron skillet with no grease.I just ordered an 11.5″ pan because we liked ours so much.I hope I get “lucky” twice in a row because I really like that pan.

4. What is “gotham steel”? is it made of of steel or titanium? Or are they using deceptive descriptions to describe an aluminum pan?

it’s supposed to be some new technology that combines non-stick ceramic surface with super strong titanium.The claim is, by allowing your food-whether it’s eggs, steaks, or even cheese-to slide right off, without using butter or oil.That didn’t happen for me.with our without oil or butter.I still had to scrape and scrape to get the food off.I actually had to work harder to get the food off than a traditional non-stick pan

Claim #1: Non stick without the use of lubricants. Videos of s’mores and melting/ burning cheese sliding out of this pan are disingenuous. Both of these foods contain enormous amounts of fats in of themselves. No surprise here. Videos of eggs cooking without the use of any fats, no so fast. This may have held some water during the early weeks of use, but quickly diminished. Truth is, a very small amount of fat is really needed to achieve this claim along with a low heat setting. Perhaps cooking s’mores first and simply wiping down the pan with a dry paper towel leaves enough oily residues to achieve this claim as well. Once washed with soap, not so much.
Claim #2: Scratch resistant. Definitely better than average, although I would think twice before beating your eggs in the pan or using a metal meat mallet to sound the dinner bell!
Claim #3: Dishwasher safe. Does this claim infer the safety to this pan or to your dishwasher? Yes, it is in fact safe for your dishwasher! Your pan, however, will most likely suffer a slow death after repeated washings. This very much depends upon the chemicals you are using in your dishwasher. Conclusion? It is best to hand wash with a minimal amount of soap.
Claim #4: Pan stands up to 500 degree oven temperatures. Well this one is just plain stupid. So long as there is food cooking in the pan, the temperature of the pan will never come close to reaching 500 degrees. The handle may, but so what! It’s constructed of steel! Want to test their claim in the absolute sense? Place your empty pan in a 500 degree oven, allow it to cook for 30 minutes and then get back to me. The point is, do not overheat an empty pan either in the oven or on the stove top.
In conclusion: Overall, this pan has performed better than any other “non-stick” pan I have ever used. It offers better non-stick potential, better longevity and better bang for your buck. And no, this will not be the last non-stick pan you will need to purchase unless you decide to boycott this style of cookware in the future or give up the chore, I mean, joy of cooking altogether!.
