Thickest – 1/16” at hilt – too narrow fir my instruments to measure.

That’s probably an accurate description for these paring knives. Mine are very sharp and do an excellent job for peeling, paring and trimming meat. They also make larger sizes for vegetable/meat slicing.

That’s probably an accurate description for these paring knives. Mine are very sharp and do an excellent job for peeling, paring and trimming meat. They also make larger sizes for vegetable/meat slicing.

I ended up buying the set of 3 as they don’t sell the longer paring knife on its own. Didnt bother me one bit as I knew I would be happy with all of them.
I noticed that on some of the reviews people complained about the quality of the knife. I tend to disagree as paring knives need to be flexible not hard and stiff. I probably chop more vegetables and slice more fruit than your average person and these knives make my work effortless.
The handle might look cheap when you look /hold it but it is perfectly ergonomically made..

Yes. Ceramic knives can be sharpened. However, you will need a fine or very fine diamond sharpener, not an ordinary knife sharpener. Advanced ceramic blades are second in hardness only to diamond, which is why they can be so sharp and hold their edge so long. But that also means that they can only be sharpened by diamond. There are several fine or very fine diamond sharpeners available on Amazon, but at this point IMORI does not manufacture or sell one. I hope this helps.

That is what I thought the holes were for. It does rosemary and dill great. It has 5 holes for different types of herbsLove it!
