Most Frequently Asked Question:

1. Will this work in the 3 quart mini?

Yes. The clamp is higher than the top of the mini, but the flat bottom of the circulator lets it easily stand in the inner pot–don’t bump it. If you crave greater stability, get a free paint stir stick from a home improvement store, lay it on its long edge across the top of the pot and apply the clamp to it.

2. How many watts is this device?

800 watts.

Source: on the Amazon product page, in the “Product information” section and its “Technical Specification”, click the “User Manual” link. That will open a PDF. On p. 4 of that PDF, it says “800W” at the bottom under a lightning icon (below the words “FOR HOUSEHOLD USE ONLY”).

3. How do you know the temperature and time to cook the food?

The Joule app works with any Sous Vide device. You can’t connect your device but the cook times and temps are accurate. Anova also has an app with visual guides for doneness. These apps were game changers for me when I first started out.

4. What about in a 20 quart pot

I’m sure it’s fine. I reccomend covering the pot with plastic or something to avoid evaporation
What Real Customers Say About This Product?

Bugs

VINE VOICE says: “I had wanted to try Sous Vide and was excited to get this, but was concerned about costs beyond this. Then I realized that with this I didn’t need to buy a container or really anything. This clamps onto my Instant Pot stainless steel insert! I just put it in place and filled it with hot water. Other than that I use Foodsaver bags as I have a lot on hand, but you can just use freezer bags. I also use small clips like this that I had on hand: https://www.amazon.com/IPOW-Multicolor-Crafting-Knitting-Quilting/dp/B01LX8WVVZ I use those to clip the bags to the tops

of the pan – the small size works perfectly. You could use clothes pins or chip bag clips or anything though.
If you didn’t have an Instant pot, you could use about ANY stock pot.
This has a line marked Maximum and Minimum. If you try to turn it on before your container has enough water in it, it will give an ERROR message. Setting the time and temperature could not be easier- it’s really just a matter of hitting a plus or minus sign and the next button. Once it turns on, it will heat the water up and you can see the water moving. When it reaches temperature, it will start the countdown.
Yes, Sous Vide really makes a TERRIFIC steak. Even a flat iron comes out fork tender. Use less seasoning, as they don’t get lost in the cooking and this method really causes them to incorporate well with the food. The steak comes out cooked uniformly all the way through, but it looks horrid. It still has to be seared on the grill or in a grill pan to give it a nice brownness and crust.
Other than bags, you can also use the SOUS VIDE with sealed glass jars for various desserts and vegetables. There are tons of good demos of cooking /recipes on youtube.

I love-
How easy it is.
It doesn’t get the instant pot dirty
How good a steak cooked this way tastes
That the sous vide doesn’t take up much storage space- it is about the size of a small immersion blender.

Downsides
food still needs to be seared so a pan is still dirtied
Cooking takes longer (but 95% or so of it is hands-off, so while you have to plan ahead well, it can also be a timesaver.).

Anova Culinary Sous Vide Precision Cooker Nano | Bluetooth | 750W | Anova App Included

The ability to lock in flavor and moisture during the cooking process results in texture and taste that is second to none.
  • SMALL BUT MIGHTY: At almost 2 inches smaller than the original Anova Precision Cooker, Nano is small enough to fit into your kitchen drawer for quick and easy storage, but powerful enough to prepare food for a table of four. Nano easily attaches to any stock pot or container with a fixed clamp, and is constructed of super durable plastic that’s easy to clean.

Most Frequently Asked Question:

1. Anova or Wancle?

Since I have only the Anova, I can not compare it to the Wancle. I can tell you that the Anova is well built, has precise temperature control and does an outstanding job cooking everything I have tested it on during the past six weeks. I would not heitate to purchase this item again.

2. What does it imply that it has less power (wattage)?

The lower wattage is directly related to the smaller water bath max capacity. The nano supports a max of 5 gallons vs 8 gallons on the 900w version. This would be a function of both ability to circulate and ability to maintain heat in a larger bath without overusing the heating element.

In terms of cook, as long as you are operating the device within its specified range there should be zero impact.

The answers about using less heat electricity are also misleading.I see no reason to believe that the nano is more efficient at creating heat per watt of power. Thus, for the same quantity of water both a 750 and a 900 would, for all intents and purposes, use the same power over the cook period.

3. Is this new model water proof? I thought it was a major flaw that the last model’s electronic display, etc, wasn’t water proof.

No, it is water resistant—which is probably fine. I believe the “Frieing” is the only sous vide sick that is actually waterproof (i.e., submersible) per IPX7 standards.

4. Can I control this sous vide heater withOUT my phone. Is there controls on the unit its self?

Yes! The top of the sois vide has touch controls that let you adjust the timer and target water temperature as well as see the current water temperature.
What Real Customers Say About This Product?

Jeff Nichols says: “Since I started cooking sous vide my family says my cooking has gone to a new level. I started with the original Anova and just recently picked up the nano. The nano is awesome because it’s much smaller vs the first anova making it easier to store in a drawer or something. It sounds trivial but by making it easier to grab I’m more likely to use it vs the anova which I kept in a special case in the pantry. I have given up cooking in the rubbermaid container with the silly lid and now just cook in a stockpot
with this silicone lid from cellar made. Setup is so much quicker and I can cook a beef roast for 30 hours without adding ANY water. If you’re just starting out in sous vide I recommend this cooker. Don’t worry about wifi or bluetooth – you don’t need it, it’s over complicated..

Most Frequently Asked Question:

1. Why has it stopped circulating water and water temperature goes up and down with a range of 10 to 12 degrees?

Because it’s broken.

2. Is there a maximum size larger than 50 liters for a covered insulated cooler setup with this 1000 watt sous vide cooker?

The limit is determined by initial water temperature, food mass, and thermal losses. If you are asking because you want to cook a larger volume of food than will fit into a 50 liter insulated container, then you should probably be looking for a commercial unit with a larger heater (maybe 3 to 5KW).If you are interested because you happen to have a larger insulated cooler and want to use it to cook at modest temperatures (below 160°F), then I would run a thermal test on your cooler by filling it with 160°F water, instrumenting it with a type K thermocouple (or a few) and watch how fast the water temperature drops with no added heat.A 1KW sous vide cooker will supply 3413 BTU/hr and 50 liters of water is approximately 53 lb and thus a 1°F temperature drop is a 53 BTU thermal loss and if the temperature drops by more than 30-35°F in the first hour, then you have too much loss to actually cook in that container since you need 500W to do the cooking while the rest of the power goes to makeup for losses. You can scale this to whatever size container you want to test so long as you leave 500W available to heat the food after offsetting the conductive and convective losses.

3. Can you cook without app ? Without WiFi ?

We have not used the app and have cooked many things. We really forgot or didn’t realize there was an app. I knew there was an app that showed recipes, maybe that is the one. But, yes cook app and WiFi free.

4. What is the max temp; will it cook at 203 F?

Max temp is 197. 203 is getting very close to boiling, so there’s likely an issue with keeping water that hot without heating the element to a level that would cause flash steam inside the cooker.
What Real Customers Say About This Product?

Michele LePage says: “This is well worth the price! This is the way to cook beef, chicken or salmon. Delicious results. Don’t get any special bag to cook with. Sealable baggies work great. You don’t need that $70 sealer or special rolls of bags. I didn’t get the special $69.99 cooking container. My dutch oven worked great. If you increase cooking time decrease the temperature the recipe calls for a little. I think low temp long cooking time produces the best result. I did chicken thighs. Then sear. Cast iron skillet is the only way to sear. 1 tablespoon butter. 1 tablespoon EVOO. Heat
to just smoking. 1 clove garlic minced. Quick sear 3 minutes each side. Perfection!.

Most Frequently Asked Question:

1. Whats the difference between the cs10001 vs cs20001?

What is the difference between the CS20001 and the CS20001?

2. The magnet doesn’t work on any of my pots except the cast iron. Is it normal?

Yes. Take a magnet and see if it sticks to your pan. It won’t stick to stainless steel or aluminum but we have some pans that have iron in the bottom layer it will stick to. We use the clip most of the time. Rule of thumb is that if a regular magnet won’t stick the Joule won’t stick.

3. What is the temperature range? can i set a precise temp? how? for example to keep soft boiled eggs (in the shell) at constant temp for a long time

I haven’t experimented with eggs, but I would suggest that you download the ChefSteps Joule App onto your phone, and then you can look at all the things within the app.I just looked up eggs, and aside from a bunch of recipes, you can go to the “Heavenly boiled eggs” recipe and set the temperature, which is variable depending on what you want. For example, their favorite is 194° which gives “tender whites and creamy yolks”.I don’t know how long you can keep them “at temperature”, but at the end of the cooking time the app always tells you how long you can leave it.The app mentioned removing the eggs when done, so maybe you can’t leave them as you can with meats, etc.

4. Can you cook chicken in already vacuum sealed packets bought from Costco?

Hi Ebert! Thanks so much for your question here! We typically do not recommend cooking meat in the original plastic packaging that it arrives in, and alternatively suggest a food-safe plastic bag. You can find our complete guide to packaging recommendations including links to bag sources to follow. We always recommend making sure that your food is placed in a sous vide/food safe plastic as outlined in the guide, as it can be hard to find out what type of plastics are used in the original store packaging. https://www.chefsteps.com/activities/a-complete-guide-to-sous-vide-packaging-safety-sustainability-and-sourcing

TOP 500 REVIEWER says: “I have both the Anova WIFI cooker and this Joule cooker. I love both cookers, but the apps for both leave a lot to be desired, which is the reason for the 4 stars. Comparing the two sous vide cookers, both have their advantages and disadvantages. 1 – The Joule cooker is 1100 Watts vs. the 900 Watts of the Anova. I have both the Anova WIFI cooker and this Joule cooker. I love both cookers, but the apps for both leave a lot to be desired, which is the reason for the 4 stars. Comparing the two sous vide cookers, both have their advantages and disadvantages.

1 – The Joule cooker is 1100 Watts vs. the 900 Watts of the Anova. So the Joule will heat the water more quickly than the Anova. Joule wins
2 – The Joule cooker has a magnetic bottom that will hold it up in a pot that is magnetic such as a cast iron pot, and the Anova must be secured with the clamp attachment. Joule wins.
3 – The Joule cooker has a clamp that works only on thin rimmed containers, and the Anova has a clamp attachment that will accommodate thick rimmed containers. Anova wins.
4 – The Joule cooker must be controlled with the app as there are no controls on the device, and the Anova may be controlled manually for temperature and time settings on the device without the use of the app. Anova wins.
5 – The Joule cooker requires a minimum 1.5 inches of water to operate and the Anova requires 2.75 inches minimum of water. Joule wins.
6 – The Joule cooker can heat up to 10 gallons of water, and the Anova can heat up to 5.5 gallons. Joule wins.
7 – The apps for both cookers do not have much in presets that would be used for everyday meals. Most of the time, the manual modes would be used, A draw for both cookers.
8 – When setting temperature in time for both cookers, the temperature must be attained for the Joule cooker before the timer is set since the timer countdown starts as soon as it is set and before the cook temperature is reached. For the Anova cooker, the timer doesn’t start until the cooking temperature is attained. In this case, it is sort of a draw as the food shouldn’t be put into the water until the cook temperature is reached, The plus with the Anova is that an ice bath can be used to keep the temperature down for longer and the cook time won’t start until the cook temperature is attained. In this case, the Anova wins.

Whether or not the Joule or the Anova cooker is best for you depends on your uses and your availability to the apps. Both have their advantages and disadvantages. I generally use the manual modes for both as the presets don’t allow for many of the foods that I cook. In addition, the presets are for store bought meats and we us only pasture fed and pasture finished meats that take less cook time. As mentioned previously, both apps leave a lot to be desired, but both cookers are excellent if you do your research and use the manual modes.

UPDATE 717/18
I have been using this sous vide cooker for about 7 months, and tend to gravitate to the Joule more than than the Anova. The Joule is much easier and faster to clip onto a cooking container than having to install the screw on holder for the Anova. Although the Anova can be used manually without the use of a phone app, I use my cookers in a second kitchen, and use the phone apps to check on progress from the main kitchen. With the phone apps, I can easily flip back and forth between cookers. I often have the meats for more than one meal cooking at a time, and have them timed so they are finished on the day the meal is planned for as some cuts of meat can take as long as 72 hours to cook. So far I have sous vide cooked chicken (whole and cut in half), roasts (pork, beef, and bison), ribs, tuna steaks, and a few others. I have never been disappointed with the results. I have also found that it is easier to set the timer after the sous vide cooker has come to temperature than to try to get the food in at the moment the timer starts. So, the timer issue mentioned above isn’t a problem for me.

I have also found that one of the best features of the sous vide cooker is rewarming foods. How many times have you cooked the perfectly cooked roast, and rewarming overcooked the leftovers. This won’t happen with sous vide cooking even if the leftovers are frozen. Simply set the temperature for your desired doneness, and the leftovers won’t cook more than the temperature set.

As an experienced cook, I have methods to cook the perfect steak and perfectly cooked fish, but have never found a method to cook tuna steaks as perfectly as when they are done with the sous vide method. By cooking them sous vide, they come out a light pink inside and so very moist – never dried out.

Another thing that I really love about sous vide cooking is that foods don’t get overcooked if you leave them in the cooker until the rest of your meal is ready. This isn’t true with any other cooking method. If you are running late, you can leave food in the cooker to keep warm until you are ready for it without fear of overcooking it. I do love the Joule sous vide cooker for the speed that it get the water to temperature and for the consistency of temperature control.

UPDATE 08/14/18:

Other than the Mellow sous vide that I have, the Joule cooker has become my favorite sous vide cooker. I like the Mellow because it is small and convenient to keep handy on the counter, but the Joule is always the cooker that I use for larger portions, like roast and ribs, since I can use a larger water container. This cooker is small, but it heats up a large amount of water much faster than many cookers, and keeps the temperature extremely accurate. If the app contains the meat you are cooking, it shows pictures of what the meat will look like at each different doneness, and describes them so you can choose what you would like best. If you find one of the presets that works for you, the cooker will set the time and temperature for you. If you work and want to set up a meal before you go to work, you can add ice cubes to the water to keep the meat cool until it is ready to cook. I like the Joule app better than the Anova app because it has presets for meats, poultry, and seafood rather an recipes that do nothing for me when planning the cooking of a protein..

Most Frequently Asked Question:

1. can regular ziplock bags be used or do I need to purchase something else to use?

Ziploc bags work fine. They’re 100% polyethylene and inert. No one’s found evidence of plasticizers leeching into anything. Definitely buy the freezer bags, and not the ones with the mechanical slider. Get the plain old freezer bags. They work reliably up to 80°C or so. Above this temperature, I double-bag, because the plastic gets soft and the zip seal gets weak. If nothing leaks, the outer bag can be reused. The plastic gets its strength back when it cools.

2. What is the diameter of the stainless steel cooker portion that goes in the water? I’m having trouble finding a container and lid that works with the

Diameter = 2.35 in.I use a Coleman Party Stacker 24 ice chest for the container. I cut a 2.5″ hole in the corner of the removable lid with a hole saw and hand drill. I turned the clamp that comes with the circulator upside down when using the ice chest to allow a stable mount for the circulator.

Most of the time for small and short cook jobs such as a single steak I use an open 6 qt dutch oven and use the clamp to hold the circulator to the side of the pot. It works without a lid, that way very well.

3. Where is it made?

China

4. Se puede utilizar sin conectar a una red wifi?, y funciona con 110v o 220v?

Sí, puede funcionar sin estar conectado a WI-FI y es de 110v.

2. Turned it on. started heating the water. shut off and now it won’t turn back on. does it need to cool back down or is it broken? first time using it

I had the same problem. It eventually did start and work again. Alas it eventually died altogether. I suspect it was an issue with the thermostat regulating the turning on and turning off of the water pump. I only good news is that when I responded to a request from VPCOK regarding their device and how it had failed, they offered to replace or refund. I had not requested a refund initially because
I thought the warranty period had expired. They subsequently reimbursed me for the original purchase- no hassle. So if it does not start to work again or does eventually completely fail, contact the company-it seems that they are committed to satisfied customers

3. Why does my sous vide say e3 when i turn it on?

Dear,
Cause: Water is below the minimum level. When the water level falls below the MIN level mark on the cooker, it will trigger a sensor and the cooker will stop to anti-dry protection. Error code E3 will be shown on the device display. Notice that because of the water level different between inside and outside of the tube, E3 may be shown though water reach just above the MIN.
Solution: Turn the device OFF. Add sufficient water. Turn the device ON again and the cooking process will resume.

What Real Customers Say About This Product?

Bubbo Ross says: “I had a Wancle sous vide and it worked pretty well overall. The scroll wheel toggle was an absolute asinine design… to the point where I had to replace it. Incoming digital touch controls! Yes! The digital design works insanely better than the scroll wheel. The display is nice and bright and easy to use. I set it for 139.8ºF and after an hour and twenty minutes, mine and my wife’s steaks came out to a perfect medium. It’s just as easy to use as I had hoped for. I ignored the booklet that came with it and rely moreso on
the internet to dictate how long I’m going to cook my food. Already knowing the exact temperature I set my questionable Wancle, I set this to the exact same tenth of a degree and my steak came out the exact same way. It was immeasurably easier to get it set up though.

If you’ve never sous-vided anything in your life, get this, set it to ~137-145ºF (58.3ºC- 62.7ºC) depending on how done you want it, and drop a steak in a ziploc bag (it’s BPA free and safe, google it if you don’t believe it). It’s just as juicy as the way everyone else describes it. I’d strongly recommend searing it on a grill or skillet lathered in butter after the timer goes beep beep. This ensures your taste buds have maximum pleasure while eating..

Most Frequently Asked Question:

1. what is the maximum temperature it can hold?

Temperature setting ranges from 104-194°F with a time range from 10 minutes to 72 hours

2. What’s the inside made of? Is it stainless steel? Also, how many watts?

Stainless. Not sure of the watts, believe 1000, but it works as advertised, and I just made the best hamburger I have ever eaten with it. Disclaimer, you will need to sear both sides in a hot pan, or as I did with a chef’s torch, but damn, so good, so juicy.

You do not need the rack to cook. Just make sure you have something that will keep the bag above the water circulator. I’ve used a small wire rack the is flat and sits higher than the circulator.

4. How many 4oz mason jars will fit in this cooker?

Six jars of that size fit easily around the bottome.

The Dash is a perfect size for two people. But I can do steaks for up to 6 people with it. The tub is super easy to clean. There are no moving parts aside from the magnetic impeller that is removable, cleanable, and replaceable. It’s impossible to gum up. The cover keeps 100% of the water inside for days (no refilling… ever, until you are cleaning the unit). The only negative is it takes a few minutes longer to heat up than the wands.

Bonuses for me are that I keep it on the counter and I can defrost my lunch with it in a few minutes. I make small one-person meat and veggie portions and seal them. Then I come home and defrost the portions super fast in the Dash and then cook up the ingredients on the stove to make rice or soup dishes. It saves me lots of money. I use the Dash almost every day and it’s been several years with no fails so far..
